190 g Saclà Arrabbiata sauce
800 g cod fillets
500 g cherry tomato purée
2 garlic cloves
2 tbsp extra virgin olive oil
1 glass dry white wine
Herb mix (sage, rosemary, marjoram, thyme) to taste
Salt to taste
Method
1 Wash and dry well the cod fillets. Defrost the fish if it’s frozen.
2 Cut the cod fillets into regular cubes.
3 In a large pan brown the cod cubes with 2 tbsp of extra virgin olive oil and 2 garlic cloves for approx. 5 minutes. Simmer with white wine until reduced.
4 Add the tomato purée, 4 tbsp of Saclà Arrabbiata and cook for approx. 15 minutes. Add salt to taste.
5 Meanwhile, finely mince the herb mix.
6 Dish out and sprinkle with the herb mix. Enjoy!
