Ingredients
Half a jar Saclà Vegan Classic Basil Pesto with tofu
1 cup of sun dried tomato (chopped)
2 tb pinenuts
2 tb olive oil
1 cup of fresh rocket
400 g of pasta of choice
1-2 tsp salt
1-2 tsp pepper
Method
1 Add the pasta to a pot of boiling salted water and cook as per pack instructions.
2 Meanwhile, in a serving bowl, add one cup of fresh rocket, pine nuts and sun dried tomatoes.
3 Drizzle olive oil through and mix.
4 Once the pasta is ready, toss this through the mix.
5 Sprinkle with salt and pepper as desired and serve.
